The Adler is a very good book. However it's too extensive for teaching undergraduates unless if it's a year long course. I have been teaching Orchestration at the Undergraduate level for more than 20 years and find that The Technique of Orchestration by Kent Kennan and Donald Grantham is very helpful to the students. It is quite practical. I ask students to buy the textbook with the CD which is very helpful but I do not use the Workbook. Instead, I have prepared a set of assignments that are reasonable for one semester. The Workbook costs $70. [...]
